🥩 The Ingredients

The ingredients come together to create a deeply savory, comforting pot roast with tender beef, sweet onions, and rich, flavorful gravy. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions

  • Chuck roast: Best for a tender, shreddable result after braising. Brisket or beef shoulder can also work, though cooking time may vary.
  • Yellow onions: Their sweetness deepens as they cook. White onions are a good substitute; sweet onions will make the dish a little sweeter.
  • Red wine: Adds depth and acidity. Use extra beef broth if you prefer to cook without wine.
  • Beef broth: Low-sodium broth makes it easier to adjust the seasoning at the end. Chicken broth can work, but the gravy will be less robust.
  • Worcestershire sauce: Adds savory depth. Substitute soy sauce, using a little less, if needed.
  • Fresh thyme and bay leaves: Dried thyme can replace fresh; omit the bay leaves if you don’t have them.
  • Flour: Helps thicken the gravy. For a gluten-free option, skip it and thicken the finished sauce with a cornstarch slurry.
  • Balsamic vinegar: Brightens the rich sauce. Red wine vinegar can be used instead, starting with a smaller amount.

📌 Tips and Tricks for Perfect Pot Roast

  • Pat the roast dry before searing so it browns well instead of steaming.
  • Sear every side deeply to build flavorful browned bits in the pot—those become the foundation of the gravy.
  • Take your time with the onions. Cook them slowly until deeply golden; don’t rush this step, since it gives the dish its signature French onion flavor.
  • Scrape the bottom of the pot as you add the wine to loosen all the browned bits. If the onions start sticking while they cook, add a splash of water.
  • Keep the pot tightly covered while braising so the beef stays moist and tender.
  • Cook until truly fork-tender. If the roast still feels firm, it needs more time; check it every 30 minutes.
  • Taste the gravy at the end and adjust with salt, pepper, or a little extra balsamic vinegar to balance its richness.
  • Make it ahead if you can. Refrigerate overnight, then lift off the solidified fat before reheating gently.

👩🏼‍🍳 How to Make French Onion Pot Roast

  1. Step 1: Pat the roast dry with paper towels (if damp). Season it all over with salt and pepper.

  1. Step 3: Over medium-low heat, melt the butter and add the onions. Sauté them, stirring occasionally, until significantly reduced and a dark amber in color, about 45 to 60 minutes. Sauté the garlic for 1 minute. Add the flour and cook for another minute.

  1. Step 6: Carefully remove the roast from the Dutch oven and slice (or shred the meat). Pour the onions and gravy into a deep platter, and top with the beef.

Expert Tip: How to Make it in a Slow Cooker

To make this in a slow cooker, caramelize the onions and sear the roast on the stovetop first for the deepest flavor, then transfer everything to the slow cooker. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender; for a thicker gravy, strain the cooking liquid into a saucepan and simmer until reduced.

🍽️ How to Serve

  • Over buttery mashed potatoes to soak up the rich onion gravy.
  • With slow-simmered green beans for a comforting, classic dinner.
  • Alongside crusty bread or skillet dinner rolls for mopping up every bit of sauce.
  • Over buttered egg noodles for an easy, hearty plate.
  • With toasted baguette and melted Gruyère for a French onion-inspired finish.
  • Garnished with fresh thyme or parsley for a touch of freshness.

🙋🏽‍♂️ Frequently Asked Questions

Can I make French onion pot roast in a slow cooker?

Yes. Sear the beef and caramelize the onions first, then cook everything on LOW for 8–9 hours or HIGH for 4–5 hours, until fork-tender.

What’s the best cut of beef for French onion pot roast?

Chuck roast is ideal because it becomes tender and flavorful during a long, slow braise. Beef shoulder or brisket can also work.

Can I make French onion pot roast without wine?

Absolutely. Replace the wine with an equal amount of beef broth; a small splash of vinegar at the end can add a little brightness.

How should I store and reheat French onion pot roast?

Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently on the stovetop or in the oven with some gravy to keep the beef moist.

Equipment

  • Dutch oven or other stove and oven-safe vessel with lid

Ingredients

  • 3½ lb chuck roast
  • salt and pepper
  • 2 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 lbs yellow onion thinly sliced, about 3 to 4 large onions
  • 4 cloves garlic minced
  • 1 tablespoon all-purpose flour
  • 1 cup red wine or extra broth
  • 2 cups beef stock or broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme fresh, chopped (or ½ teaspoon dried)
  • 2 bay leaves
  • 1 tablespoon balsamic vinegar
  • coarse sea salt for serving (optional)
  • 2 tablespoon Italian parsley chopped, for garnish (optional)
  • baguette slices toasted (optional)
  • Gruyére cheese shredded (optional)

Instructions

  • Pat the roast dry and season all over with salt and pepper. Heat the oil in a large Dutch oven over medium-high heat. Sear the roast until deeply browned on every side, about 4–5 minutes per side. Transfer to a plate.
3½ lb chuck roast, salt and pepper, 2 tablespoon olive oil
  • Add the butter and onions along with a pinch of salt. Cook, stirring often and scraping up the browned bits, for 45–60 minutes, until the onions are very soft and richly golden. If the pot gets too dark, add a tablespoon of water and scrape the bottom.
1 tablespoon unsalted butter, 3 lbs yellow onion
  • Preheat your oven to 300°F.
  • Stir in the garlic and cook for 30 seconds. Sprinkle in the flour and stir for 1 minute. Pour in the wine, scraping up all the browned bits, and simmer for 3–4 minutes. Stir in the broth, Worcestershire, thyme, 1½ teaspoon salt, 1 teaspoon black pepper, bay leaves, and balsamic vinegar, and bring to a simmer.
4 cloves garlic, 1 tablespoon all-purpose flour, 1 cup red wine, 2 cups beef stock, 1 tablespoon Worcestershire sauce, 1 teaspoon thyme, 2 bay leaves, 1 tablespoon balsamic vinegar
  • Return the roast to the pot, nestling it into the onions and liquid. Cover tightly and transfer to the oven. Cook for 3½–4 hours, turning the roast once, until it’s fork-tender and easy to pull apart.
  • Transfer the roast to a board and rest for a few minutes. Skim excess fat from the sauce, remove the bay leaves, and taste. Add salt, pepper, or a splash more balsamic if needed. Shred or slice the beef and serve with plenty of onions and gravy. Garnish with a sprinkle of coarse sea salt and chopped parsley (if desired).
coarse sea salt, 2 tablespoon Italian parsley
  • Optional (but delicious): Toast the baguette slices and then cover with shredded Gruyère. Broil until the cheese melts and is lightly browned. Sprinkle chopped thyme over the cheese. Serve with the roast, onions, and gravy.
