🧈 The Ingredients

A handful of familiar baking staples come together to create soft, pillowy buns with a rich, gooey caramel finish and plenty of warm, nutty flavor. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions

  • Yeast: Active dry yeast works well here. Make sure the milk is warm—not hot—so the yeast can activate.
  • Milk: Whole milk gives the dough a tender, rich texture. Two-percent milk can also be used.
  • Butter: Unsalted butter lets you control the salt level. If using salted butter, reduce the added salt slightly.
  • Flour: All-purpose flour keeps the buns soft. Add it gradually; the dough should be slightly tacky rather than stiff.
  • Brown sugar: Light brown sugar gives the filling and caramel a mellow sweetness. Dark brown sugar works too and adds a deeper molasses flavor.
  • Pecans: Toasting the pecans first brings out their flavor. Walnuts can be substituted, or the nuts can be omitted.
  • Honey or corn syrup: Either helps the caramel stay smooth and less likely to crystallize. Use whichever you prefer.
  • Heavy cream: It gives the caramel a creamy texture. For a less rich topping, half-and-half can be used, though the caramel may be a little thinner.
  • Cinnamon: Adjust the amount to taste, or add a pinch of nutmeg for extra warmth.

Refer to the recipe card (with video) below for a full list of ingredients and measurements.

📌 Tips and Tricks for Perfect Sticky Buns

  • Check the milk temperature. It should feel warm, not hot—about 105–110°F—so it activates the yeast without harming it.
  • Use the flour as a guide, not a fixed amount. Add it gradually and stop when the dough is soft and slightly tacky; too much flour can make the buns dense.
  • Give the dough enough time to rise. Look for it to roughly double, rather than relying only on the clock. A cool kitchen may need extra time.
  • Roll the dough evenly. A uniform rectangle helps the buns bake at a similar rate and keeps the filling distributed.
  • Watch the caramel while it bakes. Set the skillet on a foil-lined baking sheet to catch any bubbling over.
  • Check the center for doneness. The outer buns can brown before the middle is baked through. Tent loosely with foil if needed, and bake until the center bun is cooked.
  • Invert while warm. Let the skillet rest briefly, then turn the buns out onto a platter before the caramel cools and firms up. Use oven mitts—the cast iron and caramel will be very hot.
  • Serve warm. The caramel is at its gooey best shortly after the buns come out of the oven.

  1. Step 8: Starting from a long side, roll the dough into a snug log.

Expert Tip: No Mixer? No Problem!

No stand mixer? Mix the dough with a sturdy spoon until it comes together, then knead it by hand on a lightly floured surface for about 8–10 minutes. The dough should feel smooth, elastic, and slightly tacky—add flour sparingly so the buns stay soft and tender.

👨‍🍳 How to Make Caramel Pecan Sticky Buns

  1. Step 1: Cut the log into 12 rolls and place them in the skillet (or pan) over the caramel-pecan sauce.
  1. Step 2: Cover with plastic wrap and let the rolls rise for another 30-45 minutes in a warm, non-drafty area.

  1. Step 3: Bake in a 350°F oven until lightly browned and cooked through, about 30-40 minutes.
  1. Step 4: Let the rolls rest for 5 minutes. Place a large platter over the skillet/pan and invert. Serve warm.

🍽️ How to Serve

  • Serve warm, straight from the platter. The caramel topping is soft and gooey while the buns are still warm.
  • Enjoy them on their own with coffee or tea for a cozy breakfast or brunch treat.
  • Add a scoop of vanilla ice cream for a simple dessert, especially if the buns are warmed slightly.
  • Finish with a pinch of flaky salt to balance the sweetness and bring out the caramel flavor.
  • Pair with fresh fruit for a lighter brunch spread.

🙋🏽‍♂️ Frequently Asked Questions

Can I make Caramel Pecan Sticky Buns ahead of time?

Yes. Arrange the shaped buns over the caramel topping, cover the skillet, and refrigerate overnight. In the morning, let them sit at room temperature until puffy, then bake as directed.

Can I use a different pan instead of a cast-iron skillet?

Yes. A 9-by-13-inch baking dish works well. Arrange the buns over the caramel and pecans, and bake at the same temperature, checking for doneness around the recipe’s suggested time.

How do I know when the Caramel Pecan Sticky Buns are done?

The tops should be golden, and the center bun should look baked rather than doughy. If the tops brown too quickly, tent the skillet loosely with foil while the centers finish baking.

How should I store leftovers?

Once cooled, cover and refrigerate leftovers for up to 3 days. Reheat individual buns briefly in the microwave until warm and soft.

Equipment

  • Stand mixer (see NOTES about making the dough without a mixer)
  • 12-inch cast-iron skillet or 9×13 baking pan

Ingredients

For the Dough

  • ¾ cup whole milk warm, 105 to 115°F
  • 2¼ teaspoon active dry yeast
  • ¼ cup sugar
  • 2 large eggs room temperature
  • 6 tablespoon unsalted butter melted
  • 1 teaspoon fine sea salt
  • 4-4½ cups all-purpose flour
  • cooking spray

For the Cinnamon Filling

  • ¾ cup brown sugar light
  • 1½ tablespoon ground cinnamon
  • ½ teaspoon salt

For the Caramel Pecan Topping

  • ½ cup unsalted butter 1 stick, plus extra for greasing the pan
  • ¾ cup brown sugar light
  • ¼ cup heavy cream
  • ¼ cup honey
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup pecans roughly chopped, add more if desired

For Assembly

  • ½ cup unsalted butter 1 stick, room temperature

Instructions

  • In the bowl of your stand mixer, stir the warm milk, yeast, and a pinch of the sugar together. Let stand for 5–10 minutes, until foamy. If it doesn’t foam, the yeast may be inactive, or the milk may have been too hot.
¾ cup whole milk, 2¼ teaspoon active dry yeast, ¼ cup sugar
  • Whisk in the remaining sugar, eggs, melted butter, and salt. Add 4 cups of flour and mix until a shaggy dough forms. Add the dough attachment and mix for 5–7 minutes on medium, adding flour a tablespoon at a time only if the dough is very sticky. It should be soft and slightly tacky. If kneading by hand, knead for 8 to 10 minutes.
2 large eggs, 6 tablespoon unsalted butter, 1 teaspoon fine sea salt, 4-4½ cups all-purpose flour
  • Place the dough in a lightly greased bowl (greased with cooking spray) or proofing container, turn to coat, and cover. Let rise in a warm spot until doubled, about 1–1½ hours.
    cooking spray
  • While the dough is rising, stir together the brown sugar, cinnamon, and salt for the filling in a medium bowl. Set aside.
¾ cup brown sugar, 1½ tablespoon ground cinnamon, ½ teaspoon salt
  • During the final 15 minutes of proofing, melt the butter (1 stick) in a saucepan over medium heat. Stir in the brown sugar, cream, honey, and salt. Bring to a gentle simmer and cook for 1 minute, stirring. Remove from the heat and stir in the vanilla. Pour into a greased 12-inch cast-iron skillet or 9-by-13-inch baking dish and scatter the pecans evenly over the caramel.
½ cup unsalted butter, ¾ cup brown sugar, ¼ cup heavy cream, ¼ cup honey, ½ teaspoon salt, 1 teaspoon vanilla extract, ½ cup pecans
  • Roll the risen dough on a lightly floured surface into a rectangle about 16 by 12 inches. Spread with the soft butter, then sprinkle evenly with the cinnamon-sugar mixture and chopped pecans.
    ½ cup unsalted butter
  • Starting from the long side, roll the dough into a snug log. Pinch the seam closed. Cut into 12 rolls with a sharp knife, then arrange them over the caramel topping. Cover loosely with plastic wrap and let rise until puffy and nearly doubled, about 30–45 minutes. Toward the end of the rise, heat the oven to 350°F (175°C).
  • Remove the plastic wrap and bake for 25–30 minutes, until the rolls are golden and the centers are cooked through. If they brown too quickly, loosely tent the pan with foil. Let rest for 5 minutes.
  • Carefully run a knife around the edge of the pan. Place a large serving platter over the dish and, using oven mitts, flip the pan over so the caramel and pecans coat the rolls. Lift off the baking dish. Serve warm.

Notes

NOTE: Watch the video in the recipe card for visual guidance.
  • If you don’t have a cast-iron skillet, use a greased 9-by-13-inch baking dish.
  • If you don’t have a stand mixer, stir the dough together in a large bowl, then knead by hand on a lightly floured surface for 8–10 minutes, until smooth, elastic, and slightly tacky. Add flour sparingly to keep the buns soft.
  • Set the skillet on a foil-lined baking sheet in case the caramel bubbles over.
  • For overnight prep, cover the shaped buns and refrigerate; let them sit at room temperature until puffy before baking.
  • Invert the buns onto a platter after a brief rest, while the caramel is still warm and fluid. Use oven mitts—the skillet and caramel will be very hot.
