🫑 The Ingredients
This restaurant-quality dish relies on everyday grocery staples, bringing together bold, smoky pantry spices, crisp fresh produce, and rich dairy to create pure Southern comfort in a single skillet. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions
- The Andouille Sausage: Authentic smoked Louisiana Andouille delivers signature smoky, garlicky heat. If you can’t find it or prefer a milder profile, smoked kielbasa, Polska kielbasa, or even smoked turkey sausage make fantastic substitutes.
- The Chicken: We love boneless, skinless chicken breasts sliced horizontally into thin cutlets—they sear quickly, hold a delicious blackened crust, and stay juicy. Boneless, skinless chicken thighs also work beautifully if you prefer darker, richer meat.
- Cajun Seasoning: Our homemade blend lets you control the salt and spice level. If using a store-bought blend, check the label: many are very high in sodium, so hold back on adding extra salt until you taste the finished sauce.
- The Pasta: Sturdy shapes with ridges or spirals—like penne, rigatoni, or cavatappi—are ideal because they trap the luscious cream sauce. For a classic bistro feel, long noodles like fettuccine or pappardelle are wonderful options, too.
- Heavy Cream: Heavy whipping cream is the secret to a naturally thick, velvety sauce without needing a flour roux. If you swap it for half-and-half to lighten it up, you will need to stir 1½ tablespoons of all-purpose flour into the sautéed veggies before adding the liquid to help it thicken properly.
- White Wine: A dry white (like Pinot Grigio, Sauvignon Blanc, or unoaked Chardonnay) adds incredible depth and cuts through the rich cream. If you prefer to cook without alcohol, simply swap it with equal parts low-sodium chicken broth plus a tiny extra squeeze of lemon juice.
- Parmigiano-Reggiano: Always buy a wedge and grate it fresh! Pre-shredded bottled cheeses are coated with anti-caking agents that will make your cream sauce grainy instead of silky-smooth.
- The Veggies: Red and yellow bell peppers add great color and natural sweetness against the spicy Cajun seasoning. Feel free to toss in sliced baby bella (cremini) mushrooms, diced tomatoes, or fold in a handful of fresh baby spinach at the very end until wilted.
🔥 Tips and Tricks for Perfect Cajun Pasta
- Don’t Wipe That Skillet! The dark, caramelized bits left in the pan after browning the sausage and chicken (the fond) are pure culinary gold. Deglazing those bits with the wine or broth dissolves them right into the sauce, giving it an incredible depth of flavor and that signature sunset-orange color.
- Turn Off the Heat Before Adding the Cheese: To avoid a grainy, separated sauce, pull the skillet off the burner (or lower the heat all the way) right before stirring in the grated Parmesan. High, direct heat will shock the cheese proteins and cause the oils to separate.
- Always Save That Liquid Gold (Pasta Water): Scoop out a cup of the starchy pasta water just before draining the pot. If your sauce becomes too thick once tossed with the pasta, a splash of warm pasta water will loosen it up while keeping it glossy and emulsified.
- Cook the Pasta Just Shy of Al Dente: Boil your pasta for 1 to 2 minutes less than the package instructions. The pasta will finish cooking directly in the hot cream sauce, allowing it to soak up all those rich Cajun flavors without turning mushy.
- Control Your Heat Level: If you’re cooking for spice lovers, leave the cayenne at full strength and slice the andouille thicker. Cooking for a milder crowd? Cut the cayenne pepper in half and stick with sweet smoked paprika—you’ll keep all the bold, smoky flavor without the lingering burn.
👩🍳 How to Make Creamy Cajun Pasta with Chicken and Sausage

- Step 1: Bring a pot of salted water to a boil. Meanwhile, sear the sliced sausage in oil over medium heat. Remove from the pan and set aside.

- Step 2: Season the chicken with 1½ tbsps of the Cajun seasoning and then sear it in a little more oil until browned. Remove the chicken to a cutting board.

- Step 3: Sauté the onion, bell peppers, and mushrooms over medium heat until soft.

- Step 4: Stir in the garlic and the rest of the Cajun seasoning and cook, stirring often, for 1 minute. Remove the veggies to a bowl. Add the pasta to the boiling water.

- Step 5: Add the wine to the skillet over medium-high heat and use a spatula to scrape up any bits on the pan. Simmer for a couple of minutes until reduced by half.

- Step 6: Lower the heat to medium-low and pour in the heavy cream and Worcestershire sauce. Simmer for 3 to 4 minutes, until slightly thickened.

- Step 7: Turn off the heat and stir in the grated cheese, lemon juice, salt (1 tsp), and pepper (tsp).

- Step 8: Drain the pasta, reserving 1 cup of the pasta water. Gently stir in the pasta, sausage, veggies, chicken, scallions, and parsley. If needed, add a splash or two of the pasta water. Serve at once, garnished with extra scallions and parsley.
🍽 How to Serve
- Warm Bread is Non-Negotiable: You are going to want something to mop up every last drop of that velvety Cajun cream sauce! Serve it alongside warm crusty French bread, buttery garlic bread, or our favorite fluffy Southern buttermilk biscuits.
- Balance with a Crisp, Fresh Salad: A simple, crisp green salad cuts right through the richness of the heavy cream and smoky sausage. Toss mixed greens, romaine, or arugula with a bright lemon vinaigrette, classic Caesar dressing, or an Italian herb dressing.
- Garnish with Freshness and Contrast: Right before serving, give each bowl a pop of color and texture. A scatter of thinly sliced green onions (scallions), fresh chopped flat-leaf parsley, and an extra dusting of freshly grated Parmesan or cracked black pepper takes the presentation straight to restaurant quality.
- Add a Squeeze of Fresh Citrus: Serve warm lemon wedges on the side. A tiny spritz of fresh lemon juice squeezed over the top right at the table wakes up the spices and cuts the richness beautifully.
🙋🏾♂️ Frequently Asked Questions
Ridged shapes like penne rigate, cavatappi, or rigatoni work best because their grooves trap every drop of sauce. Classic long noodles like fettuccine also work great—just cook the noodles slightly shy of al dente, so they hold up well in the skillet.
To dial back the heat, cut the cayenne pepper in half and swap the andouille for mild smoked kielbasa. To crank it up, double the cayenne or finish the dish with a few generous dashes of Louisiana hot sauce.
Yes! Leftovers keep well in an airtight container in the fridge for up to 4 days. Reheat gently in a skillet over low heat with a splash of milk or broth to loosen the sauce and restore its silky texture.
We don’t recommend it. Dairy-based sauces tend to separate and turn grainy once thawed, and the noodles will lose their texture. This dish is at its absolute best enjoyed fresh or straight from the fridge.

Notes
- Reserve the Pasta Water: Always scoop out about ½ cup of the starchy cooking water before draining your pasta. A splash or two stirred in at the end is the secret to getting a glossy, clingy restaurant-style sauce.
- Freshly Grated Cheese Only: Skip pre-shredded bagged Parmesan. It contains anti-caking agents (like cellulose) that prevent it from melting smoothly, which can turn your cream sauce grainy. Always remove the skillet from direct heat before whisking the cheese in.
- Wine Substitute: If you prefer not to cook with wine, substitute equal parts low-sodium chicken broth plus an extra squeeze of fresh lemon juice to deglaze the pan.
- Taming the Heat: For a milder dish, swap the spicy Andouille for smoked kielbasa or Polish sausage, cut the cayenne in half, and choose a mild store-bought Cajun seasoning.
- Lightening It Up: If swapping heavy cream for half-and-half or whole milk, stir 1½ tablespoons of all-purpose flour into the sautéed veggies for 1 minute before adding your liquids so the sauce thickens properly.
- Storing & Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a skillet over low heat with a splash of milk or cream to revive the velvety sauce without separating the dairy. Freezing is not recommended.
