🍣 The Ingredients
This recipe pairs fresh, high-quality protein and vibrant vegetables with a perfectly balanced sweet-and-savory glaze made from simple pantry staples. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions
- Center-Cut Salmon Fillets: These are thicker and more uniform in shape, ensuring they stay juicy while the glaze caramelizes. If you prefer, you can swap the salmon for steelhead trout or even thick cod fillets (just keep an eye on the cooking time as white fish may cook faster).
- Baby Gold Potatoes: These have a naturally buttery texture and thin skins that crisp up beautifully. If you don’t have gold potatoes, red bliss potatoes, or diced sweet potatoes, make a great alternative—just ensure they are cut into small, uniform pieces so they roast quickly.
- Fresh Green Beans: Using fresh beans provides a satisfying “snap” to the dish. If you aren’t a fan of green beans, asparagus spears, or broccoli florets are excellent substitutes.
- Honey: This provides the sticky, sweet base for our sauce. For a slightly different flavor profile, you can use maple syrup or agave nectar.
- Soy Sauce: This adds the essential savory “umami” element. To make this recipe gluten-free, simply swap the soy sauce for Tamari or coconut aminos.
- Lemon Juice: Freshly squeezed juice is highly recommended for the brightest flavor, but lime juice or a splash of rice vinegar will also provide the necessary acidity to balance the honey.
- Red Pepper Flakes: These add a very subtle warmth to the glaze. Feel free to double the amount if you like a spicy kick, or omit them entirely if you prefer a completely mild dish.

🔥 Tips and Tricks for Perfect Sheet Pan Salmon
- Give the Potatoes a Head Start: Since potatoes take longer to cook than salmon and green beans, always roast them for 12–15 minutes before adding the rest of the ingredients.
- Pat the Salmon Dry: Before applying the glaze, use a paper towel to pat the salmon fillets dry. Removing excess moisture helps the honey-garlic mixture stick to the fish rather than sliding off into the pan.
- Don’t Crowd the Pan: For the best “roasted” texture, make sure your vegetables are in a single layer. If the pan is too crowded, the vegetables will steam instead of crisping up. If you’re doubling the recipe, use two separate sheet pans.
- Room Temperature is Key: Try to take your salmon out of the fridge about 15 minutes before cooking. Bringing the fish closer to room temperature helps it cook more evenly throughout.
- Check for Doneness: Salmon is perfectly cooked when it reaches an internal temperature of 145°F (63°C) or when it easily flakes with a fork. It’s better to pull it out a minute early than a minute late, as it will continue to cook slightly from the residual heat of the pan.
- Easy Cleanup: Line your sheet pan with parchment paper or heavy-duty aluminum foil. The caramelized honey glaze can be sticky, and a liner makes the “one-pan” promise even better by making cleanup nearly instant.
👩🏼🍳 How to Make Sheet Pan Honey Garlic Salmon and Roasted Vegetables

- Step 1: Toss the potatoes with 1 tablespoon of the oil and generously sprinkle all over with salt and pepper.

- Step 2: In a small bowl, whisk the honey, soy sauce, lemon juice, garlic, and red pepper flakes until combined.

- Step 3: Toss the green beans with 1 tablespoon of the oil and generously sprinkle all over with salt and pepper.

- Step 4: Pre-roast the potatoes in a parchment paper-lined baking (or sheet) pan in a 400°F (200°C) oven for 15 minutes.

- Step 5: Add the green beans to the pan and mix them with the potatoes. Nestle the salmon filets between the veggies and liberally brush the glaze over the tops of them. (Be sure to leave a little extra glaze off to the side before you glaze the salmon!)

- Step 6: Roast for another 10 to 12 minutes, until the salmon is flaky and just cooked through. Serve with extra glaze on the sides!
Expert Tip: Customizing Your Green Bean Texture
If your family prefers tender, well-cooked green beans rather than a crisp-tender “snap,” simply add them to the sheet pan halfway through the initial potato roasting time. This gives the beans an extra 6–8 minutes of heat to fully soften and caramelize before the salmon is even added to the tray, ensuring they are perfectly tender by the time the meal is served.
🙋🏽♂️ Frequently Asked Questions
Yes, just make sure to thaw the fillets completely in the refrigerator overnight and pat them dry with a paper towel before adding the glaze to ensure the sauce sticks properly.
Place any remaining portions in an airtight container and keep them in the fridge for up to two days. To reheat, use a low oven temperature or a skillet to prevent the fish from becoming too dry.
Absolutely! This dish holds up well for lunch the next day. You can even whisk the sauce together ahead of time and keep it in a small jar until you are ready to roast everything.
A large 9×13 baking dish or a heavy cast-iron skillet will work just as well. Just ensure the ingredients aren’t piled on top of each other so that the heat can circulate and roast the vegetables evenly.
It is a fantastic option for a balanced meal, as it provides high-quality protein, healthy omega-3 fats, and a generous serving of fiber-rich vegetables all in one go.

Ingredients
For the Honey Garlic Glaze
- ¼ cup honey
- 1 tablespoon soy sauce preferably low-sodium
- 1 tablespoon lemon juice
- 3 cloves garlic minced
- 1 pinch red pepper flakes
For the Salmon and Veggies
- 1½ lbs baby potatoes halved or quartered
- 2 tablespoon olive oil divided
- salt and pepper
- 1½ lbs green beans fresh, trimmed
- 4 6 oz salmon filets
Instructions
Put together the Glaze
- Add the honey, soy sauce, lemon juice, garlic, and red pepper flakes (if using) in a small bowl and stir until combined. Set a little extra off the side for a final glazing of the salmon (don't use the glaze after you've brushed the uncooked salmon). Set aside.¼ cup honey, 1 tablespoon soy sauce, 1 tablespoon lemon juice, 3 cloves garlic, 1 pinch red pepper flakes
Prepare the Sheet Pan Salmon and Veggies
- Preheat oven to 400°F (200°C).
- Place the halved (or quartered) potatoes and toss them with 1 tablespoon of olive oil and a healthy pinch of salt and pepper. Toss to coat. Place them on a large sheet pan (or baking sheet) that is lined with parchment paper (for easy clean-up). Roast the potatoes for 12 to 15 minutes.1½ lbs baby potatoes, 2 tablespoon olive oil, salt and pepper
- Meanwhile, toss the green beans in a small bowl with 1 tablespoon of olive oil and a healthy pinch of salt and pepper.1½ lbs green beans
- Toss the green beans with the partially roasted potatoes and spread them around the pan. Nestle the salmon filets in the middle of the pan. Liberally brush the glaze all over the top of the filets. Roast for another 12 to 15 minutes, or until the salmon is flaky and just cooked through (don't overcook them!).4 6 oz salmon filets
- Remove from the oven and serve at once with any of the reserved (unused) glaze at the table.
Notes
- Check for Doneness: Salmon is perfectly cooked when it reaches an internal temperature of 145°F (63°C) or flakes easily with a fork. Avoid overcooking to keep the fish moist and tender.
- Easy Cleanup: Always line your sheet pan with parchment paper or heavy-duty aluminum foil. The honey in the glaze caramelizes as it bakes and can be very difficult to scrub off a bare pan.
- Gluten-Free Option: To make this recipe entirely gluten-free, simply swap the soy sauce for an equal amount of Tamari or coconut aminos.
- Tender Veggies: If you prefer your green beans soft rather than “crisp-tender,” add them to the pan 7–8 minutes before the potatoes are finished with their initial roast.
- Serving Suggestion: This is a complete “one-pan” meal, but it also pairs beautifully with a side of fluffy quinoa or a light cucumber salad for extra freshness.
