Another delicious addition to these mahi-mahi tacos is a zesty chipotle aioli.

The fresh garlic and lime juice round out the flavor profile of the aioli perfectly.

To bring out the amazing corn taste, even more, we either throw the tortillas on the hot grill for a few minutes or place them directly on the stove gas flame.

All you need is a few flips of the tortillas and they are good to go. You could also do this by placing them individually on a skillet. Just keep them in a pocket of foil to keep them warm as you heat them all up.

Notes

Use your favorite type of chili powder.  We like chipotle chili powder, but this will definitely add some heat.  If you're looking for low to no spicy heat, then use regular chili powder.
If you can't find mahi-mahi, you can use quality tuna steak, or swordfish, or cod.
We highly recommend placing the marinating fish into a grill pan, or a cast iron skillet before grilling.  Alternatively, you could can thread the fish pieces onto skewers.
If warming the tortillas on the grill, don't leave them on too long, otherwise the heat will dry them out.  You can place them in a foil packet and warm them that way.  You won't get the nice charred grill marks, but they won't dry out that way.

Best.Tacos.Ever. My family loved it. Even my picky 6 years old asked for more fish. The explosion of flavors one gets with blackened fish, chipotle aioli and the avocado lime slaw is something that is so awesome. Today I am making it again but I am using chicken instead of fish. It is going to be added to our dinner rotations. Thank you so much.

    • Hello

Planning on making these! If I don’t grill the mahi mahi, how else can I cook them? And at what temperature and for how long, thank you

      • 5 stars
Thank you for responding so quickly Kris! I followed the recipe exactly but I did not grill- I cut mahi into cubes and put in oven at 375° for 22 minutes (I flipped the pieces half way through). As per my boyfriend this was the best thing I ever made! I don’t eat fish but these tacos were beautiful.

Also – I put the aioli directly on the mahi then topped with slaw 🙂 I served it with crispy Brussels sprouts!

        Can’t wait to make again!

Everyone should know about and try this recipe. Very exquisite. I am making again tonight for the 3rd time. Im going to switch up the chipotle aioli for a garlic habanero lime crema just to add a different heat but stick with the same flavor profile. You guys are awesome!

One of the best recipes ever. We make some version at least twice a month. This recipe is so versatile it is easy to adjust for fussy eaters. Tonight it was blackened Ahi and shrimp with homemade refried beans and mashed potatoes in the tacos. However we mix it up, the marinade, the slaw and the sauce are delicious. Thank you!

These mahi mahi tacos were amazing! I had already read the comment section before we had these tonight and I was thinking people must have been exaggerating but count us among the believers! I have made fish tacos using tilapia but there is no comparison to the mahi in this recipe. Easy to make. Used a grill pan on the grill and used the exact amount of time recommended and it was perfect. We took the leftovers to our son and his wife and promised to have the entire family over for these amazing tacos very soon.

I made these last night and these might be the best fish tacos I’ve ever had (and I live in San Diego where fish tacos are everywhere)! I didn’t have jalapeños but that is the only thing I left out. HIGHLY recommend making these. It will definitely be a staple in my house now. Thanks for the wonderful recipe!!

Ho-Lee-Cow. DANGIT these are good!!! We gobbled them up like nobody’s business. Absolute perfect balance of flavors, seasonings, and textures. We were craving carbs, so I made some black bean and brown rice pilaf instead of the slaw, and I just thin shredded some purple cabbage to top the tacos, along with the chipotle mayo, radishes, and cilantro. My husband lived in Austin during grad school, and visited the taco trucks daily. He said these were absolutely as he remembered fish tacos from back then! This recipe is a keeper.

    • Hi Lee! Please forgive us, I don’t think our response went through! You have NO IDEA how happy your message has made us!! We are so so so thrilled you had such great success with the tacos!!! We love you to pieces!!! Please stay in touch!! All the best, Kris & Wesley
