🧈 The Ingredients
This dish pairs tender, golden-seared chicken and silky noodles with a bold, buttery sauce that’s bright, savory, and gently spicy. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions
- Chicken breasts: Slice them horizontally into cutlets so they cook quickly and evenly. Boneless, skinless chicken thighs also work; cook them until they reach 175°F for tender, juicy results.
- Egg noodles: Wide egg noodles make a cozy base and catch the sauce beautifully. Fettuccine or another broad pasta can stand in.
- Butter: Use unsalted butter so you can adjust the seasoning to taste. Add it to the skillet cold and gradually over low heat for a smooth, glossy sauce.
- Dijon and lemon: They balance the richness of the butter with tang and brightness. Taste the finished sauce and add a little extra lemon if you’d like it brighter.
- Fresh herbs: Parsley, chives, and thyme give the sauce a fresh finish. Use what you have; finely chopped green onion can replace the chives.
- Heat: Adjust the red pepper flakes and cayenne to your preference, or leave out the cayenne for a milder sauce.

🔥 Tips and Tricks for Perfect Cowboy Butter Chicken
- Make the cutlets even. Pound thicker areas gently so the chicken cooks evenly and stays juicy.
- Pat the chicken dry. This helps the flour coating adhere and encourages a golden sear.
- Don’t crowd the skillet. Cook in batches if needed; crowded chicken steams instead of browning.
- Shake off excess flour. A light coating gives the chicken a delicate crust without making the sauce pasty.
- Reserve pasta water before draining. Its starch helps the cowboy butter cling to the noodles; add it gradually until the sauce is silky.
- Keep the sauce gentle. Whisk in the cold butter over low heat and avoid boiling to help keep the sauce smooth.
- Serve right away. The sauce is at its silkiest when freshly made. If it thickens while waiting, loosen it with a splash of warm pasta water.
👩🏼🍳 How to Make Cowboy Butter Chicken with Egg Noodles

- Step 1: Cut the breasts in half, horizontally. Combine the flour with the salt, pepper, and garlic powder in a pan and dredge the cutlets through it. Set aside.

- Step 2: Heat the oil (2 tbsp) and butter (1 tbsp) in a large cast-iron skillet over medium-high heat and sear the chicken until golden on both sides, about 5 minutes per side. Set aside.

- Step 3: Cook the noodles in salted boiling water, drain, saving about a cup of the pasta water. Add the noodles to a bowl and toss with the butter (4 tbsp), parsley, lemon zest, salt, and pepper.

- Step 4: Reduce the heat to medium-low, and sauté the garlic in the skillet for 1 minute. Stir in the Dijon, lemon juice, paprika, red pepper flakes, and cayenne. Stir in 3 tablespoon of the reserved pasta water.

- Step 5: Whisk in the cold cubed butter a few cubes at a time. Whisk to fully combine into a silky sauce. Season with a pinch of salt and pepper.

- Step 6: Stir in the chives (2 tbsp), parsley (2 tbsp), and thyme (2 tsp).

- Step 7: Slice the chicken into strips and place in the sauce. Simmer for a couple of minutes.

- Step 8: Add a layer of buttered noodles into shallow pasta bowls, top with the sliced chicken, and drizzle sauce over the top. Garnish with the remaining chives and parsley. Serve at once.
🍽️ How to Serve
- Serve family-style: Arrange the sauced egg noodles on a warm platter, top with sliced chicken, and drizzle with the remaining cowboy butter.
- Switch up the base: This chicken is also wonderful served over linguine, mashed potatoes, or steamed rice.
- Finish with fresh herbs and lemon: Scatter over extra chives or parsley and offer lemon wedges for a bright squeeze at the table.
- Add a vegetable side: Pair with Southern-style green beans, asparagus, or a crisp green salad to balance the rich sauce.
- Bring bread for the sauce: Warm crusty bread is perfect for mopping up any cowboy butter left on the plate.

- Reserve the pasta water before draining the noodles; you may not need the full ¼ cup.
- Toss the noodles with about half the sauce, then serve the rest over the chicken. Keep the sauce warm over low heat and avoid boiling so it stays smooth.
- Chicken breasts vary in thickness, so check for doneness with an instant-read thermometer; the thickest part should reach 165°F (74°C).
- Storing and reheating: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet over low heat with a splash of water or broth, stirring until warm; avoid high heat, which can cause the butter sauce to separate.

This sounds marvelous! Not to mention easy and not pricey. I’m going to make it for the first time for dinner next Sunday. My harshest critic (me) and 2 others will pass judgment… Stay tuned for results!
