Simply cut russet potatoes into half-inch slices and then cube them. No need to peel spuds!
On a piece of foil, layer chopped onions, then some of the cubed potatoes, and then a bit of olive oil, and season with salt and pepper.
Repeat with another layer of potatoes, onions, oil, salt, and pepper. Simply fold up the edges of the foil and crimp to create a sealed pouch.
Place on a baking sheet and bake for 20 minutes at 400°F until fork-tender!
