Crispy air-fryer baby potatoes are golden and crunchy outside, fluffy inside, and seasoned with smoky garlic and paprika. An easy side dish ready in about 25 minutes.
Preheat your air-fryer to 400°F (200°C) for 3 minutes.
Wash and dry the potatoes thoroughly. Cut them in half; quarter any noticeably larger ones so the pieces are similar in size.
1½ lbs baby potatoes
Place the potatoes in a bowl and toss with the oil. In a small bowl, combine the salt, garlic powder, smoked paprika, and pepper. Toss with the potatoes until evenly coated.

Air-fry for 18–24 minutes, shaking the basket halfway through. They’re ready when deeply golden and easily pierced with a fork. Cook in batches if the basket is crowded.
Finish with Parmesan and chopped parsley, if using. Taste and add a pinch of sea salt (or Kosher salt) while hot.

Cut larger potatoes into pieces similar in size to the smaller ones.
Arrange in a single layer and cook in batches if the basket is crowded.
Air fryers vary; check for tenderness and browning from 18 minutes onward.
Add Parmesan and fresh parsley after cooking, if using.
Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the air fryer at 375°F (190°C) until hot and crisp, about 3–5 minutes.
