Carolina mustard sauce is a tangy and flavorful condiment that hails from the southern United States, particularly the Carolinas. Made primarily from yellow mustard, apple cider vinegar, and a blend of spices, this sauce offers a delightful balance of sweetness and acidity, making it a perfect accompaniment for grilled or smoked meats, especially pork. Its vibrant yellow color and zesty taste add a unique twist to classic barbecue dishes, enhancing the flavor profile of any meal. It keeps in the fridge for up to 3 weeks!
Place the rosemary, celery seeds, bouillon cubes, mustard, onion powder, and garlic powder in a spice grinder and grind until very fine (this is optional, but it helps to make a smooth sauce).
In a bowl, add the remaining ingredients and then add the ground spices. Stir until combined and smooth.
¾ cup sugar, 1½ teaspoon Kosher salt, 1 teaspoon black pepper, 2 cups yellow mustard, 3 tablespoon ketchup, ⅔ cup apple cider vinegar, ½ teaspoon hot sauce
Transfer to a saucepan and bring to a simmer. Simmer for 5 minutes, stirring often.
Let the sauce cool completely and then transfer to a jar (or container) with a tight-fitting lid. Store in the refrigerator for up to 3 weeks. Serve at room temperature or warmed.
