Easy Grilled Chicken Wings With Buffalo Sauce

Grilled Chicken Wings with Buffalo Sauce are incredibly delicious. Crispy on the outside and deeply flavorful with every bite. The homemade blue cheese dressing puts them over the top. The BEST!

Equipment

  • Gas, charcoal, or electric grill with lid

Ingredients

For the Rub

  • 1 tsp Kosher salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • ¼ tsp chili powder

For the Wings

  • 2 lbs chicken wings flats and drumettes
  • cup hot sauce i.e., Frank's
  • cup unsalted butter
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • Homemade blue cheese dressing for serving
  • cut celery for serving

Instructions

  • In a small bowl, mix together the rub ingredients and set aside.
  • Add the chicken wings to a large bowl and stir in the rub. Toss with two large wooden spoons until the wings are evenly coated. Cover with plastic wrap and let sit in the fridge while you make the blue cheese dressing.
  • Set up your grill for 2-zone grilling (one side direct heat and the other side no heat).
  • Place the wings on the indirect heat side of the grill and cover the grill. Let cook for 7 to 10 minutes, flipping once.
  • Transfer the wings to the direct heat side of the grill and cook until lightly charred and fully cooked, about 8 to 10 minutes.
  • Meanwhile, heat the hot sauce, butter, pepper, and garlic powder in a medium-sized saucepan over medium heat. Once the butter has melted, stir occasionally and let simmer on low for 5 minutes.
  • Take the wings off of the grill and place in a large bowl. Pour the sauce over them and toss with two wooden spoons until fully coated.
  • Serve at once with cut celery sticks and the homemade blue cheese dressing on the side.

The seasoned wings can sit in the fridge (covered) for up to 12 hours. The sauce can be made 1 to 2 hours in advance. Reheat the sauce over medium heat until simmering.
Frank's is a fairly mild hot sauce. If you want your wings spicier, then add 1 tsp cayenne to the rub. 
These wings are definitely best served fresh off the grill. See the blog post for additional cooking methods.
Leftover wings will keep in the fridge for up to 5 days. Reheat in the microwave on HIGH for 15 to 30 seconds. Again, these wings are best when they are fresh off the grill and immediately tossed with the sauce.
