Ingredients

  • 3 lbs Yukon gold potatoes sliced
  • 4 tbsp duck fat or unsalted butter
  • 1 shallot chopped
  • 5 garlic cloves minced
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh rosemary chopped
  • 1/2 tsp fresh ground black pepper
  • 3 lbs Yukon gold potatoes sliced
  • 1 tbsp salt
  • 1 tbsp butter for greasing pan
  • 1 tbsp fresh parsley for garnish

Instructions

  • Pre-heat oven to 400 F
  • Grease 8-inch straight-edge cake pan with butter, or spray
  • Heat a large skillet over medium-high the duck fat.
  • Add the shallots, garlic, thyme, rosemary, pepper, and saute until tender, about 4 - 5 minutes.
  • Add the potatoes and salt and cook until softened and starting to brown, 20 - 30 minutes.
  • Taste, and add more salt, if desired.
  • Add the cooked potatoes to the prepared cake pan, pressing with your fingers, so they will adhere to one another.
  • Bake for 30 minutes, until slightly crispy on top.
  • Remove from oven and invert onto serving dish.
  • Garnish with parsley.
  • Slice, serve and enjoy!
