Chinese Noodle and Chicken Salad

This Chinese Noodle and Chicken Salad is so good!  Serve it warm or at room temp…both the Loon and I love the peanut sauce.  Enjoy on a nice Spring day!

This wonderful peanut-flavored Chinese noodle and chicken salad is made even easier with a store-bought roasted chicken.

Ingredients
  • 1 lb dried linguine
  • ¼ cup of sesame oil
  • 1 2/1/2 lb roasted chicken, skinned, boned and shredded
  • 2 bunches of green onions (scallions), sliced
  • ¼ cup of fresh cilantro, chopped
  • 2 jalapenos, seeded, deveined, and minced
  • 12 ounces of snow peas - stringed (thread pulled from outer part of snow pea)
  • DRESSING:
  • 1 cup of soy sauce
  • ½ cup of creamy peanut butter
  • ½ cup of rice vinegar
  • ½ cup of sesamae oil
  • 2 tablespoons of sugar
Instructions
  1. Cook linguine in large pot of boiling salted water until just tender, but still firm to bite.
  2. Drain.
  3. Rinse with cold water to cool, drain well.
  4. Transfer to a large bowl.
  5. Add sesame oil, toss to blend.
  6. Mix in chicken, onions, cilantro, and jalapenos.
  7. Cook snow peas in a medium saucepan of boiling salted water until just crisp-tender, about 1 minute.
  8. Drain.
  9. Rinse with cold water to cool, drain well.
  10. Mix into salad.
  11. DRESSING:
  12. Combine soy sauce, peanut butter, vinegar, sesame oil, and sugar in a food processor, blend until smooth.
  13. Pour the dressing over salad and mix with hand to blend well.
  14. Mound salad on large serving platter and serve.
