Southern Pecan Pie

Southern Pecan Pie is probably the Loon’s favorite dessert.  I’ve been working on perfecting the recipe for years.   This pie is pretty simple, but just the slightest variation can make a difference.  I love using Lyle’s Golden Syrup from England (order at www.lylesgoldensyrup.com)…it gives just the right depth of maple to the pie.  If you don’t have Lyles’, just go with equal amounts of dark and light corn syrup.   I actually find Lyle’s at my local supermarket (Stop and Shop) in the International section.  This Southern Pecan Pie makes awesome mini-pies, too!
 
If you can find it, use Lyle’s Golden Syrup.  If not, just use equal measurements of dark and light corn syrups.

Ingredients
  • 3 large eggs
  • 1 teaspoon of vanilla
  • ¾ cup of sugar
  • ½ teaspoon of salt
  • 3 tablespoons of unsalted butter, melted
  • ½ cup of Lyle's Golden Syrup
  • ½ cup of dark corn syrup
  • ½ cup of light corn syrup
  • ¾ cup of chopped pecans, toasted in the oven at 350 degrees for 10 minute
  • ½ cup of pecan halves, not chopped
  • 1 unbaked 9'' pie shell, homemade, or store-purchased
Instructions
  1. Pre-heat oven to 350
  2. Beat eggs, vanilla, sugar and salt
  3. Mix butter and syrups first, and then toasted pecans
  4. Pour mixture into pie shell, which should be in an oven proof pie dish
  5. Place un-toasted pecans on top of pie
  6. Bake fro 40 to 45 minutes, or until pie set in the center
  7. Cool on rack for 10 minutes
  8. Serve with whipped cream
