Southern Pecan Pie

Southern Pecan Pie is probably the Loon’s favorite dessert.  I’ve been working on perfecting the recipe for years.   This pie is pretty simple, but just the slightest variation can make a difference.  I love using Lyle’s Golden Syrup from England (order at…it gives just the right depth of maple to the pie.  If you don’t have Lyles’, just go with equal amounts of dark and light corn syrup.   I actually find Lyle’s at my local supermarket (Stop and Shop) in the International section.  This Southern Pecan Pie makes awesome mini-pies, too!
If you can find it, use Lyle’s Golden Syrup.  If not, just use equal measurements of dark and light corn syrups.
