Pasta Salad with Sauteed Asparagus and Sun Dried Tomatoes and Basil

This pasta salad with sauteed asparagus and sun dried tomatoes and basil is actually as good as it sounds.   Mix in some fresh mozzarella, and you and your guests are in for a treat.   This is the Loon’s all-time favorite pasta salad of all the one’s I’ve made over the years…and I agree.  Fresh, delicious, and the perfect blend of flavors.

Classic pasta salad with sauteed asparagus and sun dried tomatoes and basil

Ingredients
  • 1 lb of penne pasta
  • 1.5 cups of fresh asparagus tips
  • 4 garlic cloves, minced
  • 1 medium shallot, diced
  • ¼ cup of quality olive oil
  • Salt and pepper, to taste
  • 1 cup of basil, chopped
  • 1 cup of sun-dried tomatoes in oil, roughly chopped
  • 12 ounces of fresh mozzarella, cut into ½ inch cubes
Instructions
  1. Cook pasta until al dente, drain.
  2. Saute the asparagus tips in the oil, garlic, shallots, salt and pepper, until tender, about 5 minutes.
  3. Place the pasta in a large mixing bowl. Add in the asparagus mixture.
  4. Mix in the basil, tomatoes with the oil and the mozzarella.
  5. Toss to mix.
  6. Adjust the seasonings, if necessary.
  7. Refrigerate 1 hour or more (up to 3 hours) before serving.
