Joe T. Garcia’s Nachos

Restaurant-Quality Nachos

Inspired by the amazing nachos at the infamous Joe T. Garcias in Fort Worth, TX.

And just remember…if someone tries to steal your nacho from you…you stand your ground and yell out: “Hey!!  Those are not ch’yos!”

8 fresh yellow (or white) corn tortillas (use good one’s from your local Mexican market…or make your own)
Course salt (sea or Kosher)
Oil for frying (vegetable, peanut, or canola)
1 lb of really good cheddar cheese, grated
Pickled nacho jalapeno peppers, finely diced

Preheat oven to 400 degree

Heat oil in fryer of heavy fry pan/skillet to 350 degrees
Gently lower tortillas into hot oil.  Do this in batches (3 at a time).  Fry for about 3 minutes, flipping a couple times…they should be golden
Lightly salt with salt
Place a handful of cheese on each tortilla
Place a nice batch of jalapenos on top of cheese
Place on baking sheet…bake for approx 10 minutes…until cheese fully melted.
Serve hot!
