How to Make Grilled Corn Salad with a Butter Lime Sauce shows you how easy it is to make one of the most delicious salads we have ever had.  We have been making this salad for years, and we just had to share it with you.  If you can’t get to a grill, you can easily roast the corn in your oven.  Just leave the husks on, and then place them in an oven pre-heated to 450° F for 30 minutes.  Then just shuck the corn and proceed. Also, the lime butter sauce is divine on steamed salmon and veggies.  This is so good!!  135% Loon Approved.

How to Make Grilled Corn Salad is really quite simple. Shuck the corn, add a little olive oil, and then grill for about 15 minutes. One trick, leave the long stems at the end of the corn, so you have a little handle to hold on to as you are cutting the kernels from the corn! This salad is great served room temp, but also delicious when heated. Always a crowd favorite!

Ingredients
  • 8 ears of corn, husked and silk removed
  • 2 tablespoons olive oil, for brushing on corn
  • 1 heaping tablespoon fresh chives, chopped
  • 1 heaping tablespoon fresh parsley, chopped
  • 1 heaping tablespoon fresh basil, chopped
  • FOR THE LIME BUTTER SAUCE:
  • 1 garlic clove, roughly chopped
  • ¼ cup fresh lime juice
  • Kosher salt
  • Freshly ground black pepper
  • 1 stick unsalted butter, melted
Instructions
  1. PREPARE THE CORN:
  2. Prepare grill for direct cooking over medium heat.
  3. Brush corn with the olive oil.
  4. Grill corn until kernals are tender and lightly charred, about 20 to 25 minutes.
  5. Remove corn from grill and let stand until cool enough to handle but still warm, about 10 minutes.
  6. Cut kernels off cobs with a large knife.
  7. MAKE THE LIME BUTTER SAUCE:
  8. Puree garlic with limes juice, 1 teaspoon salt, and ½ teaspoon pepper in a blender until smooth.
  9. With motor running, add melted butter and blend until emulsified, about 30 seconds.
  10. FINISH THE SALAD:
  11. Toss the corn with the herbs and lime butter sauce.
  12. Serve and ENJOY!
