Grilled Corn on the Cob with Chili, Lime and Cotija Cheese

Fresh grilled corn on the cob with chili, lime and Cotija cheese is incredible!   I know it may sound a little weird using mayonnaise here, but trust me, smear a little of this lime and chili infused dressing on, and the taste sensation is through the roof.   Good, smokey and bursting with flavor.  Yum!!

This grilled corn on the cob with chili, lime and cotija is so delicious! The mayo mix may sound a little strange, but trust me, it's incredible! Fresh ingredients make this amazing side dish become star of the show!

Ingredients
  • 4 ears of corn, in the husk
  • ¼ cup of good quality mayonnaise
  • ⅛ teaspoon of cayenne, or to taste
  • Juice of 1 lime
  • ¾ cup of shredded cotija (or feta)
  • Lime wedges for garnish
Instructions
  1. Prepare your grill.
  2. Shuck the corn, but leave the husks on the corn.
  3. Place the husks back up around the corn, and place on grill.
  4. Cook for about 5 minutes, until husks have slightly browned.
  5. Carefully pull back the husks, and grill until the kernels are browned in spots, about 8 more minutes.
  6. While the corn is grilling, in a small bowl, whisk together the mayonnaise, cayenne and fresh lime juice.
  7. Remove the corn from the grill and place on a serving platter.
  8. Brush the mayonnaise mixture on the hot corn.
  9. Sprinkle with the cheese.
  10. Serve with lime wedges as garnish.
