Recipe type: BBQ
Cuisine: American
Serves: 8 - 12
  • 16 skewers (if using wooden, soak in water for 15 minutes)
  • 4 boneless, skin-on chicken thighs, pounded to ½-inch thickness
  • 1 tablespoon vegetable oil
  • 2 teaspoons Kosher salt
  • ½ teaspoon black pepper
  • White BBQ sauce
  1. Cut the thighs into thirds or quarters (just so they're all pretty much the same size).
  2. Weave the strips onto the skewers.
  3. Brush the chicken with the oil, and season with salt and pepper.
  4. Heat your grill to medium.
  5. When the grill is hot, put the skewers on the grill, skin-side down.
  6. Grill until the skin is nice and crispy, about 10 -12 minutes.
  7. Flip the meat and finish cooking on the other side, an additional 3 - 5 minutes.
  8. Brush the meat with ¼ cup of the BBQ sauce and char on the grill for about another minute.
  9. Serve with the remaining sauce for dipping.
  10. Enjoy!
