Golden Broccoli/Cheddar Bites and Fried Mushrooms with Homemade Ranch

These are so good.  Be sure to make the Ranch.  Delish.

Broccoli Cheddar Bites:

1 lb broccoli (steamed or blanched), dice up the florets
1/2 cup of really good cheddar cheese, shredded
1/2 cup of really good monterey jack cheese, shredded
1/4 cup finely chopped shallot
A couple dashes of red pepper hot sauce (I love Crystals, Louisian style!)
Dash of salt and peper
Panko bread crumbs
2 eggs
1/4 cup of milk
Flour (about a cup)
Oil for frying  (vegetable, peanut or canola)
 
Heat oil to 350 F
 
Mix the broccoli, cheeses, shallot, pepper sauce and S&P.   Roll into 1 inch balls with wet hands. Place in the fridge for about an hour.
 
Put flour in 1 bowl.  Put eggs and milk in another bowl.  Put bread crumbs in another.  Set the up side by side, like an assembly line.
 
Dredge the balls, 1 at a time, in the flour. 
Dip into egg mixture.  Lift out, and let excess fall off.
Roll in bread crumbs.
Set on a plate until they are all ready to jump into the hot tub.
 
Gently lower into hot oil.  Fry until golden, about 3 or 4 minutes.
 
Serve with homemade Ranch dressing. 
 
Fried Mushrooms:
 
8 oz. of cremini button mushrooms
 
Follow the same steps for the broccoli bites.  Dredge in flour.  Dip in egg mixture.  Roll in bread crumbs.  Fry for about 3 to 4 minutes.
Serve with homemade Ranch dressing.
