If it’s true that breakfast is the most important meal of the day, there’s no reason it can’t also be the most delicious, too.

There is just so much to love about this dish. Most of it can be made in advance which makes bringing a scrumptious dish to the breakfast table a breeze. It’s a one-pot wonder, so very few dishes to clean. But, first and foremost, it is incredibly delicious. Fresh buttermilk biscuits make all the difference!

How to Make the Best-Ever Skillet Breakfast

The Ingredients You Will Need

The line-up of ingredients for this dish is straight-forward, and much you’ll probably have in your fridge or pantry. We strongly recommend seeking out homemade biscuits, or make your own!

Here’s What You’ll Need to Have on Hand

Breakfast Sausage – We love Jimmy Deans regular. If desired, try the spicy variety. We don’t recommend the sage variety since you’ll be adding fresh sage to the mixture.
Onion – Chopped, fresh is best.
Garlic – Minced, fresh is best.
Buttermilk biscuits – Pick some up from a local breakfast restaurant, or make your own! In a pinch, packaged biscuits will work.
Cheddar cheese – Shredded. Monterrey Jack, or Mexican blend all work well, too.
Tomatoes – Cherry or grape tomatoes are great. Halve them.
Sage – Fresh is best, but if using dried, then cut the amount in half.
Maple syrup – Go with 100% pure (not pancake syrup).
Seasonings – Salt and pepper is all you need.
Eggs – Go with quality, it really does make a difference.

EXPERT TIP: After the sausage, onion, and garlic are fully cooked, you can transfer them to a large bowl and mix in the remaining ingredients (except the eggs), or, to save on cleaning, simply add the ingredients right into the skillet with the sausage. Carefully mix with a large spoon.

Tips for Best-Ever Breakfast Skillet

Homemade Biscuits – We understand that making the biscuits from scratch may be more than you want to take on, but, if you seek out a local breakfast or brunch restaurant, they will sell you as many as you need. Don’t worry if they are more than a day old, they will soak up all the flavors during the baking process.

Fresh Sage – You can use dried, and be just fine. But fresh adds a depth of flavor that is just amazing. Fresh sage can be found in the product section of most supermarkets.

Don’t Overcook – We recommend baking the skillet breakfast until the egg yolks are soft, but not rubbery. For yolky eggs, cook for 18 minutes, for soft egg yolks, bake for 20, and for fully cooked egg yolks, bake for 23 minutes.

EXPERT TIP: If you’re not comfortable transferring the eggs from the shell, simply crack the egg over a small bowl, and then transfer the egg from the bowl into the divot you create in the sausage mixture. The handle of a wooden spoon makes creating the divots easy.

How To Serve

This dish is definitely served straight from the skillet.

All you need is a large spoon and let family or guests serve themselves.

If serving more than 4 to 6 folks, then double the recipe and cook in a large baking dish (9×13″ or larger).

Because the dish has all you need in a meal (protein, bread, vegetables, and cheese), not much else is needed for serving. Fresh fruit is a great side, but that’s really about all!

Ingredients

  • 1 lb breakfast pork sausage ground
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups buttermilk biscuits crumbled, store-bought or homemade
  • 2 cups Cheddar cheese grated
  • 1 cup cherry tomatoes halved
  • 2 tbsp fresh sage chopped (or 2 teaspoons dried sage)
  • ¼ cup pure maple syrup
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground black pepper
  • 6 large eggs

Instructions

  • Preheat oven to 350°F.
  • In a sturdy skillet (preferably cast iron), cook the sausage, onion, and garlic over medium heat until sausage is browned and the onion is soft, about 10 minutes.
  • Add crumbled biscuits, cheese, tomatoes, sage, maple syrup, salt, and pepper. Stir until well blended.
  • Make 6 indentions (using the handle of a long spoon works well) in the sausage mixture, and break an egg into each indention.
  • Bake until eggs have just set, approx. 20 minutes (22 to 24 minutes for fully-cooked egg yolks).

The entire dish can be assembled (except for the addition of the eggs) for hours (or up to the night before). Cover with foil and then add the eggs into the indentions before baking.
