Best-Ever Creamy Onion Dip

I’m not kidding when I tell you this is the Best-Ever Creamy Onion Dip.  The flavors come to life.   You can’t stop eating it…it’s so good.  And make it up to 8 hours in advance of when guests arrive.   This also gives the amazing flavors time to meld and really get to know each other.   Adding a little cognac at the end may sound strange, but it’s subtle, and wonderfully deepens the flavor.  Of course, it’s still really good without it!  Serve with potato chips, butter crackers and/or veggies at your next gathering, and it will be gone in no time!

This really is the Best-Ever Creamy Onion Dip. Not hard to make, but, wow, is the end result amazing. Perfect for a party, or pre-dinner nibbles. Serve with potato chips or butter crackers. Really, really good!

Serves: 8 - 12
Ingredients
  • 2 tablespoons olive oil
  • 3 medium sweet onions (such as vidalia), diced small
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon of Kosher salt
  • 2 teaspoons cayenne pepper
  • 1½ teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 cup sour cream
  • ¾ cup mayonnaise
  • ½ cup mascarpone*
  • 1 bunch of scallions, thinly sliced (about ¼ cup)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Cognac (optional)
  • *Available at most supermarkets, in the cheese section, or at specialty markets, such as Whole Foods
Instructions
  1. Heat the oil in a large skillet or Dutch oven over medium heat.
  2. Add the onions and saute, stirring, until they begin to release their water, about 5 minutes.
  3. Reduce the heat to low and saute until the onions are very soft, but not dark brown, about 30 minutes.
  4. Add the thyme, salt, cayenne, black pepper, and garlic powder and cook, stirring, for another 3 minutes.
  5. Remove from the heat, transfer the onion mixture to a bowl, and cool completely (you can chill in the fridge/freezer to speed this up).
  6. Add the sour cream, mayonnaise, mascarpone, scallions, lemon juice, and Cognac and stir until combined.
  7. Refrigerate the mixture for at least 1 hour and up to 8 hours before serving - allowing the flavors to develop.
