Avocado and Chipotle-Mayo Burger

Some restaurants call this Avocado and Chipotle-Mayo Burger a California burger.  I’m not sure why…but this is my version.   The flavors just go together perfectly.  The chipotle-mayo provides a wonderful kick and the avocado cools it down a bit.  Just incredible.   An all-time favorite!

This avocado and chipotle-mayo burger is based off a California burgers that you'll find in many of your favorite burger joints. The chipotle-mayo provides a kick, and the cooling avocado is the perfect match. So good!!

Ingredients
  • MAKE THE BURGERS
  • 2 lbs of 85% sirloin beef
  • ½ teaspoon of smoked paprika
  • 1 teaspoon of Worcestershire sauce
  • Salt and pepper, to taste
  • Provolone cheese, sliced
  • 1 avocado, sliced
  • 1 ripe tomato, sliced
  • Green lettuce, chopped
  • Hamburger buns, split and lightly buttered
  • CHIPOTLE-MAYO:
  • 1 cup of good mayonaisse
  • 2 chipotles in Adobo sauce
  • ¼ cup of fresh lime juice
  • Salt and pepper, to taste
Instructions
  1. MAKE THE BURGERS:
  2. Gently mix the beef, paprika, Worcestershire sauce and salt & pepper, to taste.
  3. Form into 4 patties...gently press an indention in the center of each patty.
  4. Heat your grill to medium high heat.
  5. Add the burgers. Add a couple dashes of Worcestershire sauce. Salt and pepper.
  6. Cook on one side for about 5 to 6 minutes. Flip and cook for another 5 minutes.
  7. The last couple minutes, add the cheese.
  8. Grill the buns until lightly browned on the underside of each bun.
  9. MAKE THE CHIPOTLE-MAYO SAUCE:
  10. Add all the ingredients in your food processor and puree.
  11. Season with salt and pepper.
  12. ASSEMBLE THE BURGERS:
  13. Smear a good dose of the Chipotle-Mayo on bottom bun.
  14. Add some of the chopped lettuce.
  15. Place the burger next.
  16. Then add the sliced tomato, and then several of the avocado slices.
  17. Top with a bun.
  18. Serve and enjoy!!
